Many adults have gone back to work and the kids' school holidays will soon come to an end. 

As most people know, January can be a financially tough month if you’ve overspent during the festive season. 

This means that little is left for school supplies and uniforms and once school starts, there’s the lunches that need to be packed. 

But just because you’re on a tight budget, it doesn’t mean that you can’t pack your child a healthy lunch. 

Here are some lunch ideas for those on a budget. 

Left-overs to the rescue

Cook a larger portion of dinner on Sundays and use the leftovers for lunch throughout the week. Think pasta dishes, stir-fries, or roasted vegetables.

Turn leftover grilled chicken into wraps or add to salads.

Rice can be formed into balls or mixed with vegetables for a flavourful fried rice.

The power of protein

Canned beans (black beans, chickpeas, lentils) are an excellent source of protein and fibre. 

Add them to salads or make a simple bean salad with chopped vegetables and a light salad dressing.

Hard-boiled eggs are a quick and easy source of protein. 

Pair them with whole-grain toast, fruit, and a side of vegetables.

Crazy about fruit and veg

Buy fruits and vegetables that are in season. They are typically more affordable and tastier.

Combine nuts, seeds, dried fruit, and whole-grain cereal for a healthy and filling snack.

In their lunch box Include a variety of colourful vegetables like baby carrots, cucumber slices, bell pepper strips, and cherry tomatoes.

Smart snacks

Make your own granola bars. These are much cheaper than store-bought and can be customised with your child's favourite flavours.

Air-popped popcorn is a light and healthy snack option.
