Every time Donna Hay brings out a new cookbook I wonder at how she does it. Between recipes for her magazine and the numerous cookbooks she has produced, she has a knack for coming up with the most innovative and simple recipes. I have been collecting her cookbooks for years and have never found one that I absolutely didn’t have to own.
This latest offering is just what the doctor ordered for moms or dads or anyone who need to get food made in a hurry. The recipes are all beautifully photographed and use mainly accessible ingredients that will help you get meals on the table in a flash.
With a couple of cans, I prepared this tasty tuna dish.
Preserved lemon, tuna and bean salad
Serves 2
400g can of cannellini beans, drained and rinsed
425g can of tuna, drained
15ml chopped preserved lemon rind
250ml chopped parsley
salt and black pepper
lemon juice
toasted sourdough to serve
Combine the beans and tuna in a bowl. Add the preserved lemon, parsley, salt and pepper and mix well.
Pour over lemon juice and serve with the bread. - The Star
